Roasted salsa verde

  1. Husk and clean tamatillos.
  2. Chop onion , slice jalapeno, half bell pepper , leave garlic whole.
  3. Place all ingredients on a baking sheet lined with tin foil.
  4. Easy on clean up.
  5. Spray oil over the top of vegetables and cook in a 500 oven .
  6. They should start to char around 20 to 25 minutes.
  7. Put all ingredients from the pan , including the juices, in a blender of some sort.
  8. Add the cilantro and salt pepper
  9. Serve over chicken enchiladas or just have it by itself with chips.
