Caribbean Jerk BBQ Pork Sandwich

  1. Sprinkle 5 Tbsp.
  2. of the jerk seasoning (or 1-1/2 Tbsp.
  3. of the jerk seasoning for trial recipe) evenly over pork.
  4. Place in full hotel pan (or half hotel pan for trial recipe); cover with foil.
  5. Bake in 275F-standard oven for 3 hours (or in 250F-convection oven for 1-1/2 hours) or until pork is cooked through (160F).
  6. Remove from pan; cool slightly.
  7. Meanwhile, combine barbecue sauce, remaining 1 Tbsp.
  8. jerk seasoning (or remaining 1/2 Tbsp.
  9. jerk seasoning for trial recipe) and the cinnamon in large saucepan.
  10. Shred the pork.
  11. Add to ingredients in saucepan; mix well.
  12. Cook on medium-low heat until heated through, stirring occasionally.
  13. Spoon about 1 cup of the pork mixture into each roll just before serving.
