Warm Stir-Fried Chicken & Spinach Salad
- 9 ounces chicken breasts, cut into strips
- 3 tablespoons white wine vinegar
- 1 tablespoon olive oil
- 2 teaspoons Dijon mustard
- 12 teaspoon sugar
- 14 teaspoon salt
- 18 teaspoon paprika
- 18 teaspoon pepper
- 4 cups fresh spinach, torn
- 10 cherry tomatoes
- 12 cup shredded carrot
- 12 cup jicama or 12 cup water chestnut
- 14 cup radish, sliced
- Whisk together; vinegar, oil, mustard, sugar, salt, paprika, & pepper.
- Pour into a zip lock bag, add chicken, & marinate for 2-5 hours.
- In a large bowl combine rest of ingredients.
- Drain chicken & stir fry till done.
- Add remaining marinade & heat till boiling.
- Pour hot chicken mix over salad, toss, & serve immediately.
