Cheesy Apricot Chicken
- 4 skinless chicken fillets Whole Foods 1 lb For $3.99 thru 02/09
- 1/4 cup KRAFT Easy Cheese Cream Cheese Spread
- 420g can apricot halves, drained and sliced, reserving 2 tablespoons juice
- 2 spring onions, chopped
- 20g baby spinach leaves
- salt and pepper
- salad to serve
- Flatten chicken fillets to half a centimetre thickness between two sheets of plastic wrap.
- Place in a lightly oiled frypan and cook until golden brown on both sides.
- Combine the cream cheese spread, apricot halves, reserved juice, spring onions and spinach in a small saucepan.
- Cook over a low heat until heated through.
- Season to taste.
- Serve chicken with apricot sauce and salad.
