Cheesy Apricot Chicken

  1. Flatten chicken fillets to half a centimetre thickness between two sheets of plastic wrap.
  2. Place in a lightly oiled frypan and cook until golden brown on both sides.
  3. Combine the cream cheese spread, apricot halves, reserved juice, spring onions and spinach in a small saucepan.
  4. Cook over a low heat until heated through.
  5. Season to taste.
  6. Serve chicken with apricot sauce and salad.
