Black-Eyed Peas with Cumin Recipe
- 1 cup black-eyed peas
- 4 cups water
- 1 tomato, chopped
- 1/2 tsp whole cumin seeds
- 1/4 tsp turmeric
- 1 green chili, minced
- 1 tsp salt
- 1 tsp brown sugar
- 2 garlic cloves, minced
- 2 tbsp olive oil
- 1 tbsp chopped cilantro
- Boil peas in water with salt, sugar and turmeric for about 30 minutes.
- May need to add additional water during cooking.
- In separate pan, fry garlic, chili, chopped tomato and cumin in oil for just a minute or two.
- Don't burn the cumin.
- Add the garlic and chili fry to your boiling peas, stir and boil for an additional 15-20 minutes.
- Top with cilantro and serve over rice
