Ikayaki-style Grilled Squid

  1. Mix all ingredients for the macerating sauce.
  2. Simmer ingredients for the sauce.
  3. Remove guts and suckers.
  4. Make about 4 cuts on the top and bottom, then soak in the macerating sauce.
  5. Chill in the fridge for 30 minutes or more.
  6. Cook both sides on a fish grill.
  7. Serve with the sauce and shichimi spice to serve.
