Basic Ratatouille

  1. Dice aubergines, Peel and dice peppers and slice courgette.
  2. Skin, deseed and chop the tomatoes.
  3. Fry the aubergines in 2 tbsp olive oil for 5 min until brown and soft.
  4. Remove and add another tbsp oil to fry the courgettes until golden do the same again for the peppers.
  5. Fry the onions in the last tbsp oil for five minutes Add the garlic and fry for another minute.
  6. Add sugar, tomatoes and half the basil.
  7. Add the veg and cook for five minutes.
  8. Serve garnished with the basil.
