Crazy Middle Eastern/Indian-Ish Meatballs & Veggie Bake

  1. Line 9" x 13 " baking pan with foil.
  2. Brush on olive oil to coat.
  3. Cover bottom of pan with the first 5 ingredients for the vegetable mix.
  4. Sprinkle the last 4 ingredients over the vegetables and then drizzle olive oil.
  5. Combine all the meatball ingredients in a medium sized bowl till well incorporated.
  6. Roll into 2" balls and place on top of the frozen vegetable mixture.
  7. Cover pan with another sheet of foil sprayed with non-stick olive oil spray and seal tight.
  8. Bake in 375 degree oven for 60 minutes.
  9. Serve in bowls or over steamed rice.
