Chicken Apple Sausage, Sweet Corn and Rice Salad

  1. Start long grain rice.
  2. Make mustard vinaigrette.
  3. In a glass bowl, add mustard and red wine vinegar, slowly add olive oil as you whisk.
  4. Add S & P. Set aside.
  5. In a skillet, fry sausage over med.
  6. heat, crumble as it cooks.
  7. Add the corn and cook for 3 minutes stirring occasionally.
  8. Place cooked rice in a large bowl, add the hot sausage mixture and the cheese.
  9. Toss lightly.
  10. Add the spinach and toss.
  11. When ready to serve, place on plate, top with pine nuts and mustard vinaigrette.
  12. Enjoy.
