Green chicken
- 8 tomatillos
- 5 jalapinos
- 1/2 onion
- 1 bunch on cilantro
- 3 garlic cloves
- 1 boiling water
- 1 salt to taste
- 5 boneless chicken breast
- 1 tortilla chips or tortillas
- 1 queso cotija
- Bring water to boil.
- Add tomatillos and jalapenos
- Boil until tomatoes are just starting to get soft
- Put cilantro, onion, garlic, boiled tomatillos and jalapenos in blender.
- It will be kinda thick so I usually add some water.
- Maybe a cup or so.
- After its all blended, set aside.
- Should look like salsa
- Boil more water and cook the chicken.
- Boil until chicken can be shredded.
- Once u can shred the chicken, put it in a pan then cover with the salsa mix.
- I usually let it simmer for like 30 min, sometimes longer.
- Serve with tortilla chips or like a taco.
- My family likes to put the Mexican cotija cheese on it.
