Seafood Quesadillas

  1. Heat griddle or 10-inch skillet over medium heat.
  2. Combine shrimp, crabmeat, Old Bay seasoning, red bell pepper, green bell pepper and Monterey Jack cheese in bowl; mix well.
  3. Spread 1 side of each tortilla with butter.
  4. Top unbuttered side of tortillas evenly with seafood mixture, placing onto one-half of tortilla.
  5. Fold tortillas in half over filling; press together.
  6. Place tortillas into skillet; cook 5-7 minutes, turning once, or until cheese is melted and quesadillas are golden brown.
  7. Cut each quesadilla into thirds; serve immediately.
