Seafood Quesadillas
- 4-ounces frozen cooked salad shrimp, thawed
- 8-ounces cooked crabmeat, flaked
- 3/4 teaspoon Old Bay seasoning
- 1/4 cup finely chopped red bell pepper
- 1/4 cup finely chopped green bell pepper
- 2 cups shredded Monterey Jack cheese
- 2 tablespoons Land O Lakes Butter, softened
- 8 (8-inch) flour tortillas
- Heat griddle or 10-inch skillet over medium heat.
- Combine shrimp, crabmeat, Old Bay seasoning, red bell pepper, green bell pepper and Monterey Jack cheese in bowl; mix well.
- Spread 1 side of each tortilla with butter.
- Top unbuttered side of tortillas evenly with seafood mixture, placing onto one-half of tortilla.
- Fold tortillas in half over filling; press together.
- Place tortillas into skillet; cook 5-7 minutes, turning once, or until cheese is melted and quesadillas are golden brown.
- Cut each quesadilla into thirds; serve immediately.
