Barbecued Indonesian Pork Satay Recipe
- 1 lb Pork loin, leg or possibly shoulder, boneless, cut in 1/2" cubes
- 1/4 c. Brown sugar
- 1/4 c. Water
- 1/4 c. Soy sauce
- 1 1/2 Tbsp. Dark molasses
- 1/8 tsp Grnd coriander
- 1/8 tsp Black pepper
- 1/4 c. Onion, chopped
- 1 x Clove (small) garlic, chopped
- 1 Tbsp. Ginger root, chopped
- 2 Tbsp. Fresh lime juice Wooden skewers
- In a small saucepan, combine brown sugar and water; simmer till sugar dissolves.
- Increase heat; cook till a syrup forms.
- Add in soysauce, molasses, coriander and pepper, simmer 4 min and cold.
- Combine mix with onion, garlic, gingerroot, lime juice and Pork.
- Cover and marinate in refrigerator 2 hrs.
- Soak wooden skewers in water for 15 min.
- Thread Pork onto skewers.
- Barbecue or possibly broil with low heat 8 to 10 min to medium doneness, basting occasionally with marinade.
- Serving Ideas : Serve over rice
