Healthy Mac & Cheese
- 1/2 pounds Whole Wheat Pasta
- 2 Tablespoons Butter
- 1- 1/2 Tablespoon Flour
- 1 cup Milk
- 1 cup Mozzarella Cheese, Shredded
- 1 cup Cheddar Cheese, Shredded
- 1- 1/2 cup Frozen Veggies (we Like Broccoli Best)
- 1/4 cups Wheat Germ
- 1/2 cups Parmesan Cheese, Shredded
- 1/2 pounds Chicken Breast, Cooked And Cut Into Pieces (optional)
- Cook pasta.
- In a small pan melt butter over medium heat.
- Add flour and cook until a paste forms (about 1 min), stirring constantly.
- Slowly add milk, stirring briskly.
- Bring to a simmer, stirring constantly and cook until sauce thickens.
- In a large bowl, combine sauce with cheeses.
- Add cooked pasta and veggies to cheese sauce.
- Add chicken, if desired.
- Pour into casserole dish.
- In a small bowl combine Parmesan cheese and wheat germ.
- Sprinkle over pasta.
- Bake for 15 minutes at 350 degrees.
