Spinach Basil Orzo Recipe
- 1 cup orzo
- 1/4 cup pine nuts, toasted
- 1 tablespoon olive oil
- 2 teaspoons lemon juice
- 1/4 cup basil, chopped
- 1 cup spinach, chopped
- 2 cloves garlic, minced
- 1/4 cup Parmesan cheese
- 1/2 teaspoon salt
- Bring 4 cups water to a boil, add orzo, boil for about 7 minutes or until al dente.
- While water boils and orzo cooks, heat a small frying pan over medium heat and add pine nuts.
- Toss pine nuts around in pan until light brown, this happens pretty fast so don't walk away from this.
- When orzo is done drain and return to pot.
- Add pine nuts, olive oil, lemon juice, basil, spinach, garlic, Parmesan cheese and salt.
- Mix well, serve hot.
