Orecchiette With a Simple Marinara

  1. In a medium sauce pan, heat the oil over medium-high.
  2. Add the garlic and crushed red pepper.
  3. Bloom for 30 seconds.
  4. Add most of the basil and bloom 15 more seconds.
  5. Whizz the tomatoes in a food processor until smooth.
  6. Add to the pot, sprinkle with paprika, reduce heat and simmer for 20 minutes.
  7. Season with salt and pepper.
  8. Right at the end, add the honey.
  9. Cook the pasta until it is al dente.
  10. Drain and add to the sauce.
  11. Grate the parmesan into the pan and stir to combine.
  12. Taste it and season accordingly.
  13. Serve pasta with fresh basil and toasted breadcrumbs.
