Spiced Apple and Red Pepper Jelly
- 4 cups diced sweet red peppers
- 3 Tbsp. diced hot red chili peppers
- 1 cup apple juice
- 1/2 cup HEINZ Apple Cider Vinegar
- 6 cups sugar
- 6 pieces cinnamon stick
- 6 strips fresh lemon zest Safeway 4 ct For $5.00 thru 02/09
- 2 pouches Certo Liquid Pectin
- PUREE sweet red peppers in a food processor or blender.
- Strain mixture through a cheese cloth lined strainer or jelly bag.
- Strain enough juice to make 1-1/4 cups.
- COMBINE pepper juice, diced hot peppers, apple juice, vinegar, sugar, cinnamon and lemon in saucepan.
- Bring to a full boil.
- IMMEDIATELY stir in liquid fruit pectin.
- BRING to a full rolling boil and boil hard 1 minute, stirring constantly.
- Remove from heat and skim off foam.
- USING sterilized tongs, carefully place a cinnamon stick and a strip of lemon in warm jars.
- POUR hot jelly quickly into warm, sterilized jars filling up to 1/2 inch from rim.
- SEAL while hot with sterilized 2-piece lids with new centres.
