Spiced Apple and Red Pepper Jelly

  1. PUREE sweet red peppers in a food processor or blender.
  2. Strain mixture through a cheese cloth lined strainer or jelly bag.
  3. Strain enough juice to make 1-1/4 cups.
  4. COMBINE pepper juice, diced hot peppers, apple juice, vinegar, sugar, cinnamon and lemon in saucepan.
  5. Bring to a full boil.
  6. IMMEDIATELY stir in liquid fruit pectin.
  7. BRING to a full rolling boil and boil hard 1 minute, stirring constantly.
  8. Remove from heat and skim off foam.
  9. USING sterilized tongs, carefully place a cinnamon stick and a strip of lemon in warm jars.
  10. POUR hot jelly quickly into warm, sterilized jars filling up to 1/2 inch from rim.
  11. SEAL while hot with sterilized 2-piece lids with new centres.
