Chicken Parmigiana Burgers

  1. Chicken Patties: Combine all ingredients; shape into 24 (4-oz./115-g) oval patties (or into 6 patties for trial recipe).
  2. Place in sheet pans; freeze 1 hour.
  3. Marinara Sauce: Drain tomatoes, reserving liquid.
  4. Coarsely chop tomatoes; set aside.
  5. Saute garlic in hot oil in saucepan on medium heat 1 min.
  6. Add tomatoes and remaining ingredients; simmer 20 min.
  7. (Add reserved tomato liquid as necessary to adjust sauce thickness as desired.)
  8. Puree sauce in blender or food processor; cover to keep warm.
  9. Sandwiches: Mix cornmeal, bread crumbs, Parmesan and salt in shallow pan.
  10. Dust Chicken Patties lightly with flour; dip in eggs, then in crumb mixture, turning to evenly coat both sides of each patty.
  11. Heat oil in large skillet on medium-low heat.
  12. Cook patties, in batches, 5 to 7 min.
  13. on each side or until done (170 degrees F).
  14. Top each patty with 1 cheese slice; remove from skillet.
  15. Let stand until cheese is melted.
  16. Cover to keep warm.
  17. For each serving: Place 3 basil leaves on bottom half of bun; top with 2 Tbsp.
  18. (30 mL) Marinara Sauce and 1 chicken patty.
  19. Cover with top of bun.
