Marinated Potato Salad
- 3 lbs potatoes
- 12 cup diced carrot
- 1 12 cups green peppers, sliced thin
- 6 scallions, sliced
- 34 cup peas
- 14 cup minced parsley
- 1 teaspoon salt
- 23 cup olive oil
- 23 cup cider vinegar
- 12 teaspoon dried dill
- Wash potatoes well.
- Cover them with water in a pot and bring to a boil (dont cut or peel the potatoes).
- When just tender, drain and rinse with cold water.
- Cut into small cubes when cool enough to handle.
- Put potatoes into a medium bowl and add the rest of the ingredients.
- Stir well, chill at least one hour before serving.
