Ricotta Parfait
- 3/4 c. part-skim ricotta
- 2 tsp. agave syrup
- 1/2 tsp. freshly grated lemon peel
- 1 pinch salt
- 4 c. strawberries
- 1 c. blueberries
- 1 c. green grapes
- 1 c. chopped mango
- 1 c. raspberries
- Whisk ricotta, agave syrup, lemon peel, and pinch salt until smooth.
- Combine strawberries, blueberries, green grapes, chopped mango, and raspberries.
- Layer fruit and ricotta alternately among 4 parfait glasses.
