Cajun Shrimp Bogged Down in Rice
- 1 12 cups uncooked long grain rice
- 1 teaspoon salt
- 3 cups water
- 3 lbs fresh shrimp, peeled and deveined
- 18 teaspoon black pepper
- 2 teaspoons cajun seasoning
- 2 tablespoons vegetable oil
- 1 large onion, chopped finely
- 1 large garlic clove, minced
- 1 teaspoon lemon juice
- 14 cup finely chopped parsley
- Cook the rice with 3 c water and 1 tsp salt.
- Season the shrimp with pepper and Cajun seasoning.
- Heat oil in large skillet.
- Add onion and saute until soft.
- Add garlic and saute 30 seconds.
- Add shrimp and saute until just barely done.
- Add lemon juice and parsley to pan.
- Mix well.
- Add shrimp mixture to rice and toss.
- Serve.
