Cajun Shrimp Bogged Down in Rice

  1. Cook the rice with 3 c water and 1 tsp salt.
  2. Season the shrimp with pepper and Cajun seasoning.
  3. Heat oil in large skillet.
  4. Add onion and saute until soft.
  5. Add garlic and saute 30 seconds.
  6. Add shrimp and saute until just barely done.
  7. Add lemon juice and parsley to pan.
  8. Mix well.
  9. Add shrimp mixture to rice and toss.
  10. Serve.
