Savory Cheese-Topped Fish Fillets

  1. Place fillets in a lightly greased 13 x 9 x 2 inch baking pan; drizzle with vegetable oil.
  2. Bake at 500 degrees for 8 to 10 minutes or until the fish flakes easily when tested with a fork.
  3. Set aside.
  4. Saute the mushrooms and onions in butter in a skillet until tender.
  5. Stir in tomato and remaining ingredients; cook 1 minute.
  6. Spoon mixture over fillets.
  7. Sprinkle cheese over the fish.
  8. Broil 6 inches from the heat for 3 minutes or until the cheese melts.
