Raspberry-Fig Breakfast Bar (and Fig Puree)
- 4-1/2 cup all-purpose flour
- 3 tsp. baking powder
- 3 cups brown sugar
- 4-1/2 cup oats
- 1/2 cup butter
- margarine, softened
- 1-1/2 cup fig puree (see below)
- 8 oz. raspberry jam
- 1-1/2 cup California dried figs (coarsely chopped)
- 1 cup water
- 2 tbsp. honey
- Fig puree: Combine figs, water and honey in a saucepan; bring to a boil.
- Cover, reduce heat, and simmer 20 minutes or until softened.
- Using knife blade in food processor bowl, add fig mixture.
- Process 10 seconds or until smooth.
- Breakfast bars: Preheat oven to 250F.
- Mix all ingredients except jam.
- Form into crumbs.
- Press half of mixture into pan sprayed with Pam.
- Spread jam on crumb crust.
- Form top layer with remaining mixture.
- Bake 50 to 60 minutes.
