Lechon Kawali (Fried Pork Belly)

  1. In a stock pot, combine all the ingredients except oil.
  2. Simmer for 60 minutes, scraping off any scum that may come to the surface.
  3. Drain pork on a cooling rack and let dry for at least 1 hour.
  4. Heat oil in a skillet until it reaches 350 degrees F.
  5. Pat pork belly dry.
  6. Place in the hot oil and cook until golden, turning frequently.
  7. Cut into bite size pieces.
