Tofu & Sweet Pepper Scramble
- 1 tsp. canola oil
- 1/4 medium red onion, chopped
- 1 medium red pepper, chopped
- 6 oz. firm or extra firm lite silken tofu
- 1/4 cup TACO BELL HOME ORIGINALS Salsa
- 2 slices
- 2 slices whole wheat bread, toasted
- 2 tsp. trans fat free canola-based soft margarine
- 6 fl oz (3/4 cup) orange juice
- Heat oil over medium heat in nonstick skillet.
- Add onion and pepper; saute 5 min.
- Add tofu and salsa, chopping the tofu into the vegetables as you stir.
- Break up soy cheese into the pan, mixing well to melt cheese evenly throughout mixture.
- Enjoy toast spread with margarine with the main dish.
- Serve a glass of orange juice with the meal.
