Tofu & Sweet Pepper Scramble

  1. Heat oil over medium heat in nonstick skillet.
  2. Add onion and pepper; saute 5 min.
  3. Add tofu and salsa, chopping the tofu into the vegetables as you stir.
  4. Break up soy cheese into the pan, mixing well to melt cheese evenly throughout mixture.
  5. Enjoy toast spread with margarine with the main dish.
  6. Serve a glass of orange juice with the meal.
