- 6 Ears Fresh Corn (Husk & Silk Removed)
- 4 Slices of Bacon
- 1 Large Red Onion (Coarsely Chopped)
- 1 Red Bell Pepper (Coarsely Chopped)
- 1 Green Bell Pepper (Coarsely Chopped)
- 3 Cloves Garlic (Crushed/Chopped)
- 3 Tbsp Sugar
- 1 Tbsp Red Pepper Flakes
- Cut Fresh Corn from the cob.
- Scrape the knife blade down each husk to get all the corn and juices.
- A Bundt Pan works well for cutting the kernals from the cob by resting the cob end in the hole on the bundt pan.
- Set the corn aside.
- Heat a heavy skillet over medium heat.
- Cook Bacon until crisp, remove from skillet and drain on paper towel.
- Add onion and peppers and saute for approximately 3 minutes.
- Add Garlic and stir to prevent burning.
- Add the Corn Kernals, Red Pepper Flakes and cook for an additional 3 minutes.
- Sprinkle with Sugar and cook until the Corn begins to carmalize.
