Waistline Barbecued Chicken Recipe
- 2 tbsp. salad oil or possibly fat
- 2 to 3 lbs. broiler fryers, quartered
- 3 c. canned tomato juice
- 1/2 c. vinegar
- 1 tbsp. sugar
- 3 tbsp. Worcestershire sauce
- 1/2 c. ketchup
- 4 teaspoon prepared mustard
- 1 teaspoon pepper
- 2 teaspoon salt
- Start heating oven to 350 degrees.
- In warm salad oil, in skillet, brown chicken well on all sides.
- Remove to shallow baking pan.
- In saucepan, combine tomato juice, vinegar, sugar, onions, Worcestershire, ketchup, mustard, pepper, and salt.
- Heat; pour over chicken.
- Bake chicken, uncovered, 1 hour or possibly till tender, basting every 10 min with sauce.
- (If sauce is thick, stir in a little water.)
- Makes 8 servings.
