Vegan Cranberry-Walnut Pumpkin Muffins
- 3 12 cups flour
- 1 12 teaspoons salt
- 1 cup vegetable oil
- 1 teaspoon cinnamon
- 6 teaspoons baking soda
- 23 cup water
- 2 cups pumpkin
- 3 cups sugar
- 1 cup silken tofu
- 12 cup chopped walnuts
- 1 cup fresh cranberries
- Mix dry ingredients together.
- Mix wet ingredients together and gently add to dry ingredients.
- Stir only until ingredients are mixed.
- Fold in walnuts & cranberries.
- Bake at 350F until toothpick inserted in center comes out clean - about 30 minutes.
