Shallot Apricot Vinnegrette

• 1 Shallot
• 1 tbsp Apricot Preserve
• 3 1/2 tbsp Extra Virgin Olive Oil
• 3 1/2 tbsp White Wine Vinegar
• 1 box Baby arugula
• 1 cup Seedless green grapes, halved
• 1/2 cup Blue cheese crumbles
• 1/2 cup Pecans, halved and toasted

1. Whisk together till smooth.
2. Add salt and pepper to taste.
