Pan-Seared Beef with Wasabi Sauce

  1. In medium bowl, combine wasabi powder with 1 tablespoon cold water and stir until smooth.
  2. Add sour cream, chives, parsley, vinegar, and 1/4 teaspoon salt and stir to combine.
  3. Cover and refrigerate until ready to serve.
  4. In 10-inch skillet, heat oil over medium-high heat.
  5. Sprinkle beef with remaining 1/4 teaspoon salt and sear about 3 minutes per side for rare.
  6. Reduce heat to medium and cook, turning occasionally, to desired degree of doneness, about 5 minutes per side for medium-rare.
  7. Serve beef with wasabi suace.
