Brad's jalapeno cheese grits
- 1 1/2 cup dry grits
- 1 1/2 cup water
- 1 jalapeno, diced and seeded
- 1/2 onion, diced
- 2 tbsp milk
- 1 salt to taste
- 8 oz velveeta cheese
- 1/2 cup shredded cheddar cheese
- saute onion and pepper in oil
- at the same time, add cheese and milk to a saucepan.
- cook on low until cheese is smooth
- in a large pot boil water covered
- when water boils, slowly add grits so they don't clump
- turn heat to lowest setting.
- simmer for a couple minutes until grits are tender
- add cheese and vegetables
- serve immediately
