Five-Grain Muffins
- 1 1/4 cup buttermilk
- 1/4 cup margarine, melted
- 2 eggs
- 1 cup brown sugar
- 1 cup wheat and barley cereal nuggets
- 1/2 cup rolled oats
- 1/4 cup cornmeal
- 1 1/2 cup whole wheat flour, (or all-purpose)
- 2 tsp. baking soda
- 1/2 (125) raisins
- HEAT oven to 350F (180C).
- IN a large bowl, combine buttermilk, margarine and eggs.
- Add sugar, cereal, oats and cornmeal; let stand 10 minutes.
- MEANWHILE, mix flour, soda and raisins.
- ADD dry ingredients to wet ingredients, stirring only until just moistened.
- SPOON into greased muffin cups.
- BAKE for 20 to 25 minutes, until golden brown.
