Holiday Roasted Pepper Spread
- 2 cups roasted red peppers, peeled and seeded, diced small
- 6 ounces chevre cheese
- 16 ounces cream cheese
- 12 cup shallot, minced
- 2 tablespoons garlic, minced
- 12 cup fresh cilantro
- 14 cup lime juice
- 1 cup yogurt
- Puree roasted red bell peppers.
- Mix cheeses until soft.
- Gradually combine all ingredients until completely incorporated with cheese.
- Chill until firm and serve with crackers or rustic bread.
