Sweet Potato Fritters w/ Butter Dipping Sauce

  1. Prepare butter sauce.
  2. In a small pot, melt butter over med-high heat, add sugar and stir for 3 minutes.
  3. Add vanilla and half and half.
  4. Stirring constantly, cook for another 3 minutes.
  5. Remove from heat and set aside.
  6. Mix together the first 7 ingredients.
  7. When well blended, stir in flour.
  8. Drop by scant tablespoon full in hot oil.
  9. Flipping fritters once or twice, cook until golden dark brown.
  10. Drain on paper towels.
  11. Arrange on a platter, sprinkle with powdered sugar.
  12. Serve with butter dipping sauce.
  13. Makes 20 to 24 fritters.
