Italian Sausage in Sauce
- 3 whole Green Peppers, Sliced
- 1 whole Onion, Sliced
- 3 cloves Garlic, Minced
- 2 Tablespoons Olive Oil
- 2 pounds Mild Or Hot Italian Sausage
- 1 can (6 Oz. Can) Tomato Paste
- 1 cup Water, Or More If You Want It Thinner
- 1 cup Good White Or Dry Red Wine
- 1 Tablespoon Capers
- In a large heavy pan, saute sliced green peppers, onions and minced garlic in olive oil until tender.
- Add the skinned and quartered sausages and saute the sausage until brown.
- Add the tomato paste with the water, wine, and capers; stir until combined.
- Lower the heat and cover, simmer, and cook for about an hour.
- Serve over pasta, polenta or some good crusty bread.
