Chicken With Lemon and Herbs

  1. Preheat the broiler to medium.
  2. In a small pan, melt the butter then add the scallions, herbs, lemon juice and salt and pepper.
  3. Brush the chicken generously with the herb mixture, then broil for 10-12 minutes, basting frequently with the herb mixture.
  4. Turn over, baste again then cook for a further 10 minutes or until the juices run clear.
  5. Serve, garnished with lemon slices and herb leaves if wished.
