Kimchi and Pineapple Grilled Cheese
- 13 cups Kimchi
- 13 cups Cubed Pineapple Chunks
- 2 slices Bread
- 1 Tablespoon Butter
- 2 ounces, weight Grated Mozzarella Cheese
- Heat a skillet on medium-low heat.
- Toss the kimchi and pineapple into the skillet and warm it for approximately 5 minutes.
- Remove the mixture from the skillet and set aside.
- Butter one side of each slice of bread (1/2 tablespoon each slice).
- Spread half of the cheese on the bottom slice (on the non-buttered side).
- Scoop the kimchi and pineapple onto the sandwich (on top of the bottom layer of cheese).
- Spread the rest of the cheese on top of the kimchi and pineapple.
- Close the sandwich with the top slice of bread (buttered side facing up).
- Press down to secure the ingredients as much as you can, and place in the skillet on moderate heat.
- Grill until golden brown on both sides, approximately 4 minutes a side.
