Spicy Garlic Chicken with Vegetables
- 1 Onion, Diced
- 4 cloves Garlic, Minced
- 1 Green Bell Pepper, Chopped
- 2 Tomatoes, Diced
- 1 pound Chicken Breast, Cut Into Bite Size Pieces
- Salt
- 1 teaspoon Curry Powder
- 13 cups Fresh Cilantro, Chopped
- Asian Hot Sauce (I Used Just A Few Small Squirts Of Sriracha!)
- 2 cups Cooked White Rice
- Saute onions, garlic, and bell pepper over medium heat until tender (at least five minutes).
- Add tomatoes and chicken, stirring until chicken is cooked and no longer pink.
- Sprinkle salt, curry powder, cilantro, and hot sauce over the dish and stir to combine.
- Serve over cooked white rice.
- Enjoy!
