Easy Peasy Butternut Soup
- 1 large butternut squash
- 125 g butter
- milk
- 1 pinch nutmeg
- salt and pepper
- cream (optional)
- Peel and deseed butternut.
- Cut butternut into cubes and boil until tender.
- Mash butternut or liquidise in food processor.
- Melt about butter in a pot.
- Pour butternut into the pot, and add milk to thin it out.
- Add salt, pepper and nutmeg.
- Stir well, cover and let simmer for 10 minutes.
- Serve with a dollop of cream (optional).
