Thai Chicken Recipe
- 4 chicken breasts, cut
- 1 c. salsa
- 1/3 c. peanut butter
- 2 tsp. soy sauce
- 2 tsp. balsamic vinegar
- 1 tsp. molasses
- 2 tsp. water
- 1 tsp. chili pwdr
- 1/2 tsp. grnd ginger
- 1/2 tsp. garlic pwdr
- 1 tsp. sesame seed
- 2 tsp. oil
- 3 c. rice, cooked
- Bring to boil salsa, peanut butter, soy sauce, vinegar, molasses and water, stirring often.
- Keep hot.
- Combine chili pwdr, ginger and garlic pwdr in plastic bag.
- Add in chicken strips to bag and shake to coat.
- In skillet or possibly wok, stir-fry chicken in oil over meduim-high heat, 2-3 minutes.
- or possibly till cooked.
- Spoon sauce over rice on plates; arrange chicken and sprinkle with sesame seed.
- Optional: Garnish with green onion and chives.
