Cajun Gator With Green Peppercorn Sauce Recipe

  1. Season gator (to your taste).
  2. Heat butter in heavy skillet over medium heat.
  3. Turn heat to high, place gator in skillet and saute/fry till moisture comes to the top of the gator.
  4. Turn gator over and continue to saute/fry for another minute.
  5. Add in brandy and flambe.
  6. Add in peppercorns and heavy cream, continue to cook till cream thickens.
  7. Enjoy!
