Sausage Casserole on a Bed of Mediterranean Vegetables

  1. Slice the potatoes and brush with melted butter.
  2. Place into the oven for 30 to 40 minutes until they are cooked and golden brown.
  3. Heat 1 oz.
  4. of the butter in a pan, then add the peppers and a sprinkle of salt and pepper.
  5. Heat the other 1 oz.
  6. of butter in another pan, add the onions and a sprinkle of salt and pepper.
  7. Add 1 glass of brown ale to the onions and then do the same to the peppers.
  8. Tip the onions into the pan of peppers and stir.
  9. Place the mixed peppers and onions into the bottom of a casserole dish.
  10. Cut up the four sausages into pieces and place into the vegetables.
  11. Sprinkle with some mixed herbs.
  12. Layer with the sliced potatoes.
  13. Season with salt and pepper.
