Bhindi Bajhi (Spicy Okra)
- 1 tbsp. oil
- 1 clove garlic
- 10 to 12 bhindi (okra) per serving
- 3 bay leaves
- 1 onion, chopped
- 1/2 tsp. turmeric
- 1/2 tsp. curry powder
- 2 tsp. fresh coriander
- Heat the oil in a pan and fry the garlic until golden brown.
- Add to the onion and bay leaves and fry for 1 minute.
- Add the spices and fry.
- Wash and trim the bhindi, then chop into small pieces.
- Add to the pan and cook for 4 to 5 minutes.
- Add 2 tsp.
- coriander.
- Heat for another minute, then serve.
