Brie Bruschetta
- 1 whole Tomato, Finely Chopped
- 1 clove Garlic, Crushed
- 1 teaspoon Olive Oil
- 1- 1/2 teaspoon Dried Sweet Basil, Crushed
- 1/4 teaspoons Salt
- 2 dashes Pepper
- 4 ounces, weight (125g) Brie Cheese Round, With Rind
- 1 whole Baguette Bread, Sliced, Toasted Or Plain
- Combine first 6 ingredients in a small bowl.
- Stir.
- Let stand at room temperature for 1 hour.
- Set cheese round in an ungreased small shallow casserole dish (I use a pie plate).
- Using a slotted spoon and allowing most of the liquid to drain off, transfer tomato mixture over top of cheese round.
- Discard remaining liquid.
- Bake uncovered, in a 375 degrees (F) oven for 8-10 minutes until cheese is soft inside of the rind.
- Transfer onto serving platter using a pancake lifter.
- Surround with baguette slices.
- Serve and enjoy.
