Brie Bruschetta

  1. Combine first 6 ingredients in a small bowl.
  2. Stir.
  3. Let stand at room temperature for 1 hour.
  4. Set cheese round in an ungreased small shallow casserole dish (I use a pie plate).
  5. Using a slotted spoon and allowing most of the liquid to drain off, transfer tomato mixture over top of cheese round.
  6. Discard remaining liquid.
  7. Bake uncovered, in a 375 degrees (F) oven for 8-10 minutes until cheese is soft inside of the rind.
  8. Transfer onto serving platter using a pancake lifter.
  9. Surround with baguette slices.
  10. Serve and enjoy.
