Apricot and Coconut Balls
- 34 cup all-bran cereal
- 12 cup hot water
- 1 cup dried apricot
- 13-23 cup skim sweetened condensed milk
- 34 cup desiccated coconut, for rolling
- Place bran cereal in bowl, pour over hot water.
- Set aside for 5 minutes then place in food processor.
- Add apricots and sweetened condensed milk.
- Process till well combined - about a minute.
- Mixture should be reasonably firm.
- Roll into balls, roll in coconut.
- Refrigerate balls for 2 hours in fridge.
