Citrus and Honey Fish
- 23 cup fresh squeezed orange juice (about 1 orange)
- 5 tablespoons lemon juice
- 1 garlic clove, peeled and finely chopped
- 1 -2 tablespoon clear honey
- 4 white fish fillets, skin on
- 2 tablespoons all-purpose flour, seasoned with salt and pepper, for dusting
- 1 tablespoon vegetable oil
- 2 -4 teaspoons dark soy sauce, to taste
- 12 ounce fresh cilantro, chopped
- In a small pan, add orange juice, lemon juice, garlic and honey, and bring to the boil.
- Bubble gently for a couple of minutes.
- In the meantime, pat dry fish fillets with kitchen paper, then dust with seasoned flour.
- In a large frying pan, heat oil then cook fish for a couple of mins on each side, till golden brown.
- You may need to cook in batches; in which case keep them warm in the oven.
- Season sauce with freshly ground black pepper and soy sauce, then stir in cilantro.
- Pour over the fish to serve.
