Emeril's Pineapple Batida: Batida de Abacaxi

  1. Combine rum, pineapple juice, lemon juice and simple syrup in a cocktail shaker and shake vigorously.
  2. Strain into a cocktail glass over crushed ice.
  3. Garnish with pineapple wedge.
