Spiced Vegetables over Cinnamon Couscous

  1. Heat oil in large skillet over medium heat.
  2. Add onion, bell pepper, leek, garlic, carrots, sweet potato, and parsnips.
  3. Cook, stirring frequently, 10 minutes.
  4. Add small amounts of water as necessary to prevent sticking.
  5. Add remaining ingredients.
  6. When mixture boils, reduce heat to medium-low, cover, and cook until vegetables are tender (15-20 minutes).
  7. Prepare couscous: Bring 2-1/4 cups water to a boil.
  8. Stir in couscous and cinnamon.
  9. Cover and remove from heat.
  10. Let stand five minutes.
  11. Fluff with a fork before serving.
  12. Serve vegetables over couscous.
