Pickled Green Peppers Recipe

  1. Wash peppers.
  2. Remove seed pods and white "seams."
  3. Cut lengthwise into 3/4 inch strips.
  4. Place pepper strips in bowl; cover with boiling water.
  5. Let stand 5 min; drain.
  6. Combine vinegar, water and sugar in saucepan; simmer 5 min.
  7. Meanwhile, pack peppers into clean, warm jars.
  8. To each jar, add in 2 cloves garlic, 1 tsp.
  9. salad oil and 1/2 tsp.
  10. salt.
  11. Pour warm liquid over peppers to within 1/2 inch of top making sure vinegar solution covers peppers.
  12. Cap each jar at once.
  13. Process 5 min in boiling water bath.
  14. Makes 4 pints.
