Field Berry Soufle'

  1. put egg whites and sugar in a bowl - whip with an electric mixer until peaks form and stay (i feel sorry for those doing this by hand).
  2. In 4 - 2 cup ramekins put approximately 1 tablespoon (or more if you like) field berries - i used frozen thawed to room temperature.
  3. evenly distribute the whipped egg whites between the ramekins and gently fold the fruit in for about 3 - 4 turns.
  4. Any more will cause the eggs to deflate.
  5. Bake in a 375 degree oven for 18 - 20 minutes without peeking.
  6. Voila - soufle'.
