Tennessee Fruit Cake Cookies Recipe
- 1 pound minced dates
- 1 pound glazed pineapple
- 1 pound glazed cherries
- 1 1/2 pound white raisins
- 1 pound minced nuts
- 1 c. brown sugar
- 2 ounce. wine
- 4 Large eggs
- 4 c. flour
- 1/2 c. shortening (calls for butter)
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
- 1 teaspoon salt
- 3 teaspoon baking soda in 3 tbsp. lowfat milk
- Mix minced fruit with 1 c. flour.
- Cream shortening and sugar.
- Add in Large eggs.
- Beat well after each egg.
- Add in dry ingredients alternately with wine and lowfat milk.
- Mix in fruit.
- You might need a large roaster to mix this in.
- Bake in moderate oven.
- Drop by teaspoonfuls.
